BREAKFAST TACOS

SCRAMBLED MESS

Are you ready to solve one of your BIGGEST problems? Dustin Myers is showing us how to cook Scrambled Mess on this week's Muscle Meals! This is a great way to get rid of leftover food! All you need are eggs, a source of protein, and veggies! Try this one out!

 

BREAKFAST BURGERS

After a hard workout there is nothing better than smashing some food.  Some people might think, hamburgers for breakfast????  Trust us on this one!  Dustin is cooking up these AMAZING Breakfast Burgers that are great for refueling after a workout.  Give these Breakfast Burgers a try and let us know what you think!

 

BREAKFAST SALAD

Dustin is going over a great healthy recipe for a Breakfast Salad that will give you a great start to your day.  Dustin is going to solve a problem for you.  What is that problem you ask???  How many times have you found yourself where you have whipped up a nice salad and then you either don't have time or don't have chicken to throw on the grill?  You don't have a nice steak to slice up and put over top of the salad?  Now what are you going to do with the salad when you need to add some protein to it???  We don't want to have to resort to a can of tuna.  We want something nice and something that tastes good.  So, what Dustin is going to show you is how to fry up a couple eggs and some turkey lunch meat in coconut oil and put that over your salad.  Give this Breakfast Salad a try and let us know what you think!

 

STUFFED BREAKFAST PEPPERS

Want to be the hit of your buddy’s tailgate cookout?  Show up early before the game with a tray of these hot mamas and everyone will want to hire you to cater the next one.

Ingredients:

Cherry Peppers - 12

Eggs - 2

Prosciutto or Ham - 4 oz diced

Goat Cheese - 2oz crumbled

Garlic - 2 cloves diced

Basil - 1/4 chopped fresh leaves or 2 TBL dried

 

Process:

- Preheat oven to 325

- cut tops off peppers and remove seeds.  Place peppers on foil lined tray

- whisk eggs, garlic, cheese, ham, basil and a dash of salt in mixing bowl

- place filling into large zip lock bag

    

- cut bottom corner off of bag and squeeze filling into peppers.  Do not over-fill.  Replace tops of peppers.

- Bake at 325 for 45-60 minutes or until peppers look wrinkled and cooked thoroughly.

 

Notes: 

The egg will expand as it cooks, so be careful not to over-fill.  The ingredient amounts are approximate, it may very depending on the size of the peppers you use.  If using bigger peppers such as bell peppers or banana peppers you will need to increase the cooking time slightly.  If making a batch for a tailgate, you will need to double or triple the recipe.
