The Ultimate Grilled Chicken

2lbs Boneless Skinless Chicken Thighs

 

Rub:

Olive oil - 1/2 cup

Lemon - juice of 1/2 fresh lemon

Soy Sauce - 1 circle

Basil - palm full

Paprika - small palm full

Garlic salt - 1 Tablespoon

pepper - 1 teaspoon

 

Combine all rub ingredients into a paste in a large mixing bowl.  The spice amounts are estimates, you can add a little more or a little less of any that you choose.  Add chicken and mix thoroughly, coating all surfaces and crevices in the meat.  Let sit while grill preheats to medium low.

Add to heated grill and tun often, for 30-60 minutes depending on desired level of doneness.  I recommend cooking the chicken thighs until most of the fat has cooked out of them (they will shrink to about 2/3 original size), slow and on low.
