The New School Power Bowl

One of the biggest (and most tasty) casualties of following a low carb diet is potatoes.  If you find yourself craving some home fries to go with your eggs and sausage, try subbing out the spuds for fried cauliflower.  The taste and texture is very similar to fried potatoes, and this new school breakfast bowl will give you the satisfaction of eating a lumber jack breakfast, minus the high glycemic guilt.


Cauliflower - 1 head, chopped

Turkey or Chicken Sausage - 2 links, sliced

Onion - 1/4-1/2 large, diced

Peppers - 2 small, or 1/2 bell pepper

Garlic - 2 cloves

Olive oil - 2 Tablespoons

Basil - 1 Tablespoon

Parsley - 1 Tablespoon

Salt - to taste


1. Sautee all vegetables in a covered pan.

2. When Cauliflower is almost finished, add sliced precooked sausage

3. Remove Cauliflower mix and add to bowl

4. Fry 2 eggs over easy to top each bowl

5. Makes 2 servings
