The Fiesta Egg Sandwich

Tired of Taco Tuesday? Think egg sandwiches are only for Starbucks breakfasts? Here’s a versatile egg sandwich variation with a Mexican flair that can be enjoyed for any meal of the day.

Eggs - 2
Avocado - 1/2
Eziekel Bread - 2 slices
Salsa - 2-3 tablespoons
Onion - 1/2 small, diced
Peppers - 1/4 cup, diced
Olive oil - 2T
Salt and pepper
Goat cheese or other cheese (optional)

Sauté onion and peppers in olive oil until translucent.
Fry 2 eggs, flipping once “over easy”
Toast bread
Layer ingredients together on toast and party down.
Optional - add deli meat, or any leftover protein (beef, chicken, etc.). Simply dive meat and fry with onions and peppers.
