Muscle Meals - The Christmas Reuben
A classic Reuben is one of my favorite sandwiches, but like most sandwiches, its something I only eat once or twice a year. The holiday season is the perfect time to indulge in this protein packed calorie bomb, and if you are going to do it, you might as well do it right. Homemade. When I say homemade, I’m talking about the whole thing which includes making a whole corned beef brisket. One of the downsides to a sandwich shop Reuben is that the corned beef is occasionally rubbery - after all it is usually lunch meat. By making the brisket yourself you are assuring a tender mouthwatering beef base for your sandwich, plus plenty of left over corned beef to fry up with some eggs in the morning. Try my take on this classic sandwich and treat yourself and some friends to the best Reuben they’ve ever had.
3-4lb Corned Beef Brisket (can substitute regular beef brisket)
1 Bottle of Beer
Mustard (dijon or spicy)
1/4 cup Mayo
1/8 cup Olive oil
1 Tablespoon Balsamic Vinegar
Step 1: Preparing the Brisket
-Place seasoned corned Beef Brisket in a lasagna dish, fat side down.
-Cover top with cracked pepper (if doing a regular beef brisket, top with plenty of garlic salt as well).
-Slice one Apple and add to baking dish
-Pour in one bottle of beer plus another cup of water.
-Cover very tight with aluminum foil.
-Place in oven at 250 and allow to cook over night approximately 12 hours.
*note: the brisket package will say 3-4 hours at 350, but trust me…12 hours at 250 will make it super tender
-Once the brisket is finished, remove from oven and let it cool slightly before slicing thinly against the grain.
Step 2: Slaw
-Shred 1/2 head of Red Cabbage.
-In large bowl combine mayo, olive oil, and vinegar.
-Add cabbage and stir until coated.
-Salt and pepper to taste.
Step 3: Build your sandwich
-Grill 2 slices of Rye in lightly buttered skillet
-layer in this order: bread, mustard, swiss cheese, as much corned beef as you can handle, slaw, sriracha, bread.
Step 4: Game time
-crush the Reuben
-take a nap
-wake up and fry some eggs to go with the left over corned beef
