Muscle Meals - Taco Omelet
Ever wonder what to do with that left over taco meat sitting in your fridge? Of course the obvious answer is to make more Tacos...but if you are looking for a low carb alternative I have the perfect recipe for you. The taco omelette.
Salsa or Sriracha
1 Tablespoon Olive Oil
Taco meat (ground beef, taco seasoning)
Salt and pepper
Shred cabbage and chop cilantro. Mix with lime juice, olive oil, and salt and pepper and set aside.
Begin sauteing onions and peppers in olive oil over medium heat. Beat eggs and then pour mixture over vegetables. Once eggs are almost cooked thru, carefully flip. Heat taco meat in microwave (or brown separately in pan if making a new batch). Add meat, cheese, salsa, and avocado to eggs and fold. Top with cilantro slaw.
