“Protein and healthy fat packed bowl of goodness and gains”
Eggs - 3, scrambled
Tomatoes - 2 medium or 8 cherry
Kale - 2-3 large leaves, deveined and sliced super thin
Avocado - 1/2
Turkey Sausage - 3 links
Hot or Bell Pepper - 1/4 cup, chopped
Garlic - 2 cloves sliced thin
Olive oil - 3 tablespoons
Basil - 3 leaves
Heat 2 iron skillets on medium. Add 1 T Olive oil to each. In the first pan, add sausage links (sliced into wheels), garlic and chopped peppers. Season with salt and cook until done.
In the second pan, pour scrambled eggs. Pull egg to the middle away from the sides, then flip after 1-2 minutes. Remove egg and use to line the bowl. Add the rest of the olive oil, sliced tomatoes and kale and cover. Cook 2-3 minutes, stirring occasionally, until kale is wilted.
Remove sausage/pepper mix and vegetables and add to bowl. Top with Avocado, goat cheese (optional) and Sriracha (optional).
