Arugula - 1 handful
Red or Bibb Lettuce - 1 handful
Walnuts - 2-3 oz
Beets - 3-4 large
Avocado - 1 large
Combine ingredients in large mixing bowl. Add 1/4 cup goat cheese, fresh squeezed juice of 1 lemon, and 2-3 tablespoons olive oil. Toss and add sea salt and cracked black pepper. Serves 2.
