Zoodle Carbonara

Zoodle?  Zasta?  Vegechini?  I know it sounds crazy, but homemade zucchini noodles are a great past alternative for the carb conscious among us that still crave some classic Italian dishes.

Ingredients:

Zucchini - 2 (spiralized into “zoodles”)

Bell Pepper - 1 chopped

Onion - 1 chopped

Egg - 1 beaten

salami or ham - 4oz chopped

garlic salt - 1 teaspoon

Basil - 1 teaspoon

Olive Oil - 2-4 Tablespoons

Butter - 1 tablespoon

Parmesan or goat cheese (optional)

Method:

Heat large skillet on medium and add olive oil

Salute onion and peppers until almost fully cooked.

Add garlic salt, basil and more olive oil

Add zoodles and cover, stiring occasionally for 5-10 minutes depending on desired crispness

Stir in Salami and cook briefly

Add Butter

Pour egg over zoodles and stir briskly until mixture completely coats vegetables.

Remove from heat and continue to stir for 1 minute.

Serve hot
