Unbelievable Taco Lettuce Wraps

Need a low carb option for your next Taco Tuesday?  You’re not going to believe how tasty these healthy corn and gluten free taco wraps are.

1lb Lean Ground Beef

1 packet Taco seasoning

Goat Cheese

Sriracha or salsa

1 head Iceberg Lettuce

Guac

Avocado - 2 smashed

Lime - 1 squeezed

Cilantro - 1-2T chopped

Olive Oil - 1T

Sea Salt

Fiery Sweet Green Salsa

4 Tomatillos - pealed and diced

4 Jalepenos - sliced

1 red Onion - diced thin

4 Garlic Cloves - sliced thin

1T Tomato Paste

Basil - 1 Tablespoon

Olive Oil - 2 tablespoons

Water - 2oz

Sea Salt

1. Saute all Salsa ingredients on medium, then cover and simmer on low until cooked down.  Set aside.

2. Brown meat in skillet on medium heat then add seasoning packet and simmer per packet directions.

3. Combine all guac ingredients in bowl and mash together.

4. Layer meat, salsa, guac and cheese inside lettuce shell.  Roll up and chow down.

***note: you may choose to substitute premade salsa for the homemade tomatillo green salsa.
