Muscle Meals - Mediterranean Summer Salad

With summer time approaching we are heading into everyone’s favorite time of the year.  Warm weather means graduation parties, family reunions and cook outs at the lake.  While the tastes and smells of the grill at your family cookout may be a summer time staple, it can also be one of the biggest dieting pitfalls.  If you are doing Anabolic Fasting or any other low carb plan you may have a tough time at a cookout.  Sure there will be burgers that you can eat bun-less and maybe even some grilled chicken, but good luck finding a side dish.  All of the traditional bbq sides are loaded in carbs (and mayo or cheese), but I’m here to save the day.  Show up to your family reunion with this easy and delicious AF-approved Mediterranean Summer Salad and your relatives will have no problem leaving the cheesy potatoes off of their plate.

 

Ingredients:

Cherry Tomatoes - 1 container

Cucumber - 1 large or 2 medium

Kalamata Olives - 1 jar, pitted and drained

Goat Cheese or Feta Cheese - 1 container, crumbled (may substitute 2 diced avocados)

Onion - 1/4 diced very fine

Fresh Basil

Sun Dried Tomato Pesto - 1/2 small jar

Lemon - 1

Olive Oil - 1/4 cup

Salt

Pepper

 

Step 1:

Slice tomatoes in half.  Quarter the cucumber then slice into pieces.  Drain the olives.  Dice the onion into very small pieces.  Chop the fresh basil (may substitute 1-2T dried basil) 

  

Step 2:

In large mixing bowl combine pesto, olive oil, juice of 1 lemon and basil.  Mix thoroughly.

  

Step 3:

Add vegetables and cheese to dressing and mix.  Salt and pepper to taste.  Serve chilled.
