Ingredients:

Main dish:

Grouper fillets - two 8oz

olive oil - 1 tablespoon

butter - 1 Tablespoon

Sea Salt

Cracked Pepper

Onion - 1 small

tomatoes - 3 medium

Basil - 1 tablespoon fresh, or 1 teaspoon dried

Salad:

Spinach

Arugula

Red Bell Pepper

Cucumber

Walnuts

red wine vinegar

olive oil

Process:

Preheat Oven to 425

Heat cast iron skillet on medium/medium high.

Add 1 Tablespoon oil.

Pat fillets dry and season with salt and pepper

Once oil is hot add butter then lay fish flesh side down in pan

Once a nice crust forms (2-3 minutes), flip fish, add vegetables and place skillet in oven.

Cook another 8-10 minutes or until fish flakes easily with a fork.

Remove fish from pan and return pan to stovetop burner on medium.

Add basil Sautee vegetables another 2-3 minutes or until onions are translucent.

Salad:

Finely chop all ingredients and dress with vinegar, olive oil, salt, and pepper.
